Observe techniques and theory of cooking
with whole dish grains including millet, oats, rices, buckwheat, and quinoa;
plus sumptuous sauces, luscious vegetables, and both basic and elegant
beans. It includes an introduction to the "creative process" of cooking
that is unique to this school.

Technique and theory of cooking soups, stock,
and simple desserts with unrefined sweeteners, and the energetic and esthetic
balance in meal composition. Home style, everyday, and elegant cooking
are emphasized through breakfast, one dish meals, and three to five course
meals. Part I is a pre-requisite.

Improvisation is an essential skill to foster
while cooking. It refines and improves speed and accuracy in cooking while
it supports your spirit. This group of hands-on classes strengthens and
integrates Parts I and II. It can be taken over and over again for those
who love to explore new horizons. Available to all who have completed Part I.
Students completing all three parts of The Main Course will have received 45 hours of training and a Certificate from the School of Natural Cookery. |
